Easter Bun Recipe

Even though our thoughts and daily life have been over-run and consumed with COVID-19 and all its implications we can not forget to enjoy life and hold onto things we value and consider dear. An example of the sort of thing that is worth holding onto is the practice of our traditions.

One such tradition is the practice of buying bun and cheese to enjoy with out families and or to give as gifts to customers, co-workers and everyone else. As Easter time is here again, this is the time of year that advertisements and commercials of Easter bun would traditionally be blazing the airways.

Jamaicans have long had a love affair with Easter bun which is not to be confused with just plain “bun” – a term used for being cheated on by one’s lover. The latter is the type that no one wants. The type on offer for sale under the brands of HTB, Coronation and Maxfield Bakery is usually welcomed with bright smiles.

However not everyone will be able to access their favourite bun this year as some are forced to be away from home this time for whatever reason. Such persons should take refuge in knowing that they can bake their very own Easter bun.

The following is a bun recipe that hopefully will bring joy and happiness in this difficult time.

Preparation time 10 minutes

Cooking time 1 hour

Ingredients

  • 2 ounces of margarine
  • 1 bottle of stout
  • 1/2 cup of wine
  • 1 teaspoon of vanilla
  • 1/2 tablespoon of browning
  • 1 tablespoon of guava Jam
  • 1 medium egg (optional)
  • 8 ounces of dark sugar
  • 1 pound of counter flour
  • 1 teaspoon of nutmeg
  • 1/4 teaspoon of salt
  • 1 teaspoon of cinnamon powder
  • 1 tablespoon of baking powder
  • 1 tablespoon of mixed spice
  • 1/4 pound of mixed peel, chopped
  • 1/4 pound of raisins (soaked)

Homemade Easter Bun Directions

  1. Melt margarine and allow to cool, then add stout, wine, vanilla, browning, guava Jam and beaten egg (if used).
  2. Stir in the sugar and mix until all the granules are dissolved.
  3. Mix together all the dry ingredients then add the chopped mixed peel and raisins.
  4. Combine liquid mixture with dry ingredients and mix well.
  5. Scrape the batter into a greased loaf pan 12″x4″x3″.
  6. Bake in a preheated oven at 180°C/350°F or until a skewer inserted comes out clean.
  7. Cool on a cooling rack.
  8. To Glaze: Combine 2 tablespoons honey with two tablespoons water and bring to a boil; remove from flame and use a pastry brush to apply it over the surface of the bun.


    To Serve:  Serve with slices of cheese.
    Yield:  1 loaf
